Upping the workouts

So you know I love to workout, why I hear you say. Well my love of exercise began when I was in high school I had low self esteem no confidence and didn’t like how I looked all my friends were skinny and could eat what they wanted. So yes I developed an eating disorder but discovered I could eat but use exercise to control my weight.

So my obsession with running began. My friends never understood why I ran or went to the gym. Well when you have an eating disorder you suffer from depression so what is one of the best ways to help depression exercise of course. It makes you feel amazing as you release endorphins as you exercise the feel good hormones, you lose weight and have this amazing energy afterwards.

I did the Belfast marathon last year in aid of #awareni the charity for depression as they helped me through one of the toughest times in my life, it was mentally hard for me but I did it all 26 miles, would I do it again maybe the London or New York marathon.

I also did a 110 miles cycle on my second day on a road bike and with about a months training on a mountain bike, as I was a single mom I didn’t get to do the training I should have to prepare for these events but as i keep myself fit at home it was easy enough.

I then started doing weight training, resistance training during the summer to build lean muscle but I have missed my cardio so have started to run and do hit again as I have put on a few pounds and want to get my fitness back. I don’t want to be #skinny I want to be #strong and #healthy I have made a lot of mistakes with my weight that have caused me a lot of health issues as I got older.

I then wanted to do something different so I decided to give pole, aerial silk and hoop classes once a week at #flyawayaerialstudio in Lisburn. I was so scared wearing skimpy shorts, everything on show to everyone in a room of mirrors. Nightmare yes so I thought but then there were women there of every shape and size and it didn’t bother me as much and it helped to boost my confidence and not be so worried about what my body looks like.

A lot of people see this as something seedy but they are actually a sport now and until you try them you don’t realise the flexibility and strength you need very similar to gymnastics and I think the woman who do these classes are amazing. The moves can be very scary as your holding onto a pole with merely skin holding you up while you’re upside down but it makes me feel amazing and my kids thing what I do is amazing. They are so proud of me which spurs me on.

Sweet potato falafel

Sweet potato falafel wrap 

I love falafel it is so tasty with the spices but also very filling as they are made from chickpeas. I decided to make my own and love sweet potato so combined them into sweet potato falafel.

First put the sweet potato in the food processor cut into chunks, then at the chickpeas and onion. Then add the spices and flour. Then mould then into balls.

Place on a baking tray and place in the oven at 220” for 20 – 30 mins. I then served them with my homemade slaw. I don’t like mayo and coleslaw is very high in cals as well so I like to make my own as it’s kore colourful and crunchy.

This delicious slaw is made with:

4 carrots grated

1 red onion sliced thinly

half a red cabbage finely sliced

cheese cheddar or Parmesan grated

add some spinach, kale or rocket sliced up

add aome nuts for added protein and omega 3

crush or slice some almonds and roasted pumpkin seeds and scatter over the top

you can also add avocado for more omega3

I sometimes add some brocolli finely chopped

for the dressing:

olive oil, lemon juice, sea salt, apple cider vinegar and some natural yogurt

To serve then put them into pitta bread, wraps or flat bread along with the slaw and top with some Natural Greek yogurt.

Keep healthy this winter

keep away flu’s and colds by adding some of these supper ingredients to smoothies, drinks, salad dressings, veggie dishes, pastas, curry’s etc.

Also Make sure you get exercise everyday even just a walk and make sure you wrap up warm and drink at least 8 glasses of water and lots of sunshine and fresh air. This will help keep all of the bugs away and keep you healthy and full of energy this winter.

Also get outside with the kids go to the park, walk the dog, go for a cycle or go to a forest park and do some exploring at the same time, jump in leaves and have fun release some endorphins to life your mood.

Make sure you have plenty of fluids and if you can’t do cold water try hot water and add a few slices of lemon slices. Detoxing and well as lovely and warming.

Baked Salmon with Greek Grains

Winter warmer with amazing nutrition with brain boosting omega 3 rich salmon and Greek grains.

Baked Salmon and Greek Grains

Ingredients

salmon

1 tablespoon of lemon juice and a pinch of salt

houmous

ground almonds, toasted pumpkin seeds and cashews

pesto

feta cheese

baby potatoes

garlic butter

brocolli

baby tomatoes

buckwheat 1/2 cup

1 tsp olive oil, lemon juice, apple cider vinegar

pinch of salt

Directions :

1. Put oven on at 220 degrees place the salmon fillets on a baking sheet covered in tinfoil, drizzle over the lemon juice and add a pinch of salt and bake in the oven for 20 mins

2. Slice the baby potatoes into slices and add a tbsp of garlic butter and place in the oven for 40 mins

3. Add baby tomatoes into the oven to bake

4. Take half a cup of buckwheat grains and add 1 cup of cold water and cook until all the water is soaked in the  add 1 tsp apple cider vinegar, lemon juice and olive oil stir, then add a tsp of pesto and houmous.

5. Take the salmon out of the oven and top with houmous, sprinkle the crushed nuts and feta cheese then drizzle the pesto over and place back in the oven.

6. Get some brocolli and break up and place in the oven for 10 mins.

7. Take the tomatoes and potatoes out of the oven and chopped a few up and add to the buckwheat grains and some feta cheese then place in the plate. Add the baked tomatoes, potato slices and broccoli, finally place the salmon fillet on top of the grains.

one amazingly delicious but healthy balanced meal.

Salmon is one of those super foods you should have in your diet at least once a week amazing for the skin,  brain and mood to name a few.

I teamed this up with some Greek style grains called buckwheat. This is another superfood helping reduce the risk of breast cancer and also a great substitute for meat if you are a vegetarian or vegan.

Sweet sprout bowl

So fridge was getting bare what was I going to make for tea, so search the fridge and found some sweet potato and some Brussels sprouts.

These food are both lowgi and really good for depression among many other things.

So my recipe from my #moodfitplan was sliced #brusselsprouts chopped up #sweetpotato fried in a frying pan with #oliveoil #seasalt #garlic and a little water to soften the sweet potato then I added in some #pistachios chopped then to serve add half an #avacado some #pumpkinseeds and #greekyogurt

Best of all my kids loved it and cleared their plates, imagine kids eating brussel sprouts it’s all in how you serve it to them, my kids are increasingly eating more and more veg which they previously would have responded with yuck 🤢

Another great recipe for Brussel sprouts is to fry with #smokedsalmon #walnuts then to serve same as above yum you can even add some bread like a #bagel or #muffin wholemeal preferably and only half great for #breakfast or #tea
