Healthy American style pancakes

So for snatch today

I had American style pancakes
With maple syrup and bacon

This is my healthy take on it

Pancakes I actually made 2 types

For me I had
1/2 cup oats
2 eggs
1 banana
Vanilla extract

For the kids
2 eggs
1 cup spelt flour
1 cup coconut milk

If you’re vegan you can substitute the eggs with chia seeds for 1 egg 1 tsp chia seeds with 3 tbsp of water so for this recipes just double it up

We had with turkey bacon and some
Maple syrup

Mindfulness

Something that really helped me through my darkest of days, helped me stop worrying so much and taking each day as it comes which is all we can do at the minute is Mindfulness

So over the weeks to come I will share lots of things that have helped me get to where I am today and hopefully one day will be a programme to help everyone with mental health issues

So here is what mindfulness is sounds so simply right but we get so caught up in our fast paced lives trying to fit in work and kids we forget just to take a minute to just sit still and take in the world

Everything is connected our thoughts can make us motivated, can make us eat the wrong things, not be a nice person but only we can change the negative to a positive

So if you are stressed mindfulness is great to help you to calm down, focus, remove thoughts from your head, look at life from a simpler viewpoint and to learn just to breath

Pancakes 7 ways

It’s Pancake Day tomorrow so I thought I’d share some of my healthy pancake recipes

Who thought there were so many alternatives

I never buy pancakes I love to make my own and the kids do too it’s a weekend activity for us

So the kids usually have a healthy twist with maybe half flour half oats or almond milk instead of cows milk

My fav is the protein pancakes so far but think I’ll try the sweet potato ones tomorrow after a day of cleansing I deserve a treat

As for topping go easy

Add some Greek yogurt
Honey
Maple syrup
Peanut butter

Natural sugars are the best or add some berries or banana for a bit of healthy sugars

Overnight maple oats

Breakfast in a hurry never skip unless doing a cleanse day or fasting

I made these overnight oats with leftover porridge my 6 year old didn’t eat I don’t waste food I recycle it

I put it in this jar topped with maple syrup
Walnuts and cashews
Natural Greek yogurt
Topped with chia seeds
Walnuts and cashews
Seeds
Maple syrup

All I had to do was boil the kettle to have a cup of coffee with it and my daughter loved it too

Protein lunch wrapped up

Couldn’t decide what to have for lunch wanted something warm but filling


So I made a 2 egg omelette and wrapped it up with some spinach, rocket, tomatoes, 1/4 avocado, 1 slice of feta, pesto & prickle of sunflower and pumpkin seeds


So yummy so filling amazing protein lunch without the carbs for low carb days

we started the day with some pancakes and waffles packed with love and also bananas and vanilla yogurt and a little dark choc and peanut butter the waffles and pancakes are packed with protein made with half a cup of oats, 2 eggs and a banana 🍌
