Mindful eating at freight Belfast

So had a mad day today

Met an amazing, inspiring beautiful woman today who is my new role model Brenda Shankey and what she is doing for kids with her mindfulness courses our ambitions are the same.

Then we popped over for lunch at #freight in #eastbelfast amazing place and the food amazing I was enjoying it so much forgot to take a pic sorry but all the food I love so I had a lovely baked eggs dish with slaw.

Amazing building and the owners were amazing too very inspirational stories which just shows if you are passionate about something you can make it happen someone will turn up in your life to help you on your journey to find your purpose

Sunny Sunday’s

It was a lovely sunny Sunday and I could feel spring in the air. We started the day with a visit to the cinema got an early bird session for £1.80 each borough our own fresh uncoated #popcorn and #healthy gluten free #tortilla chips. We saw wreck it Ralph takes over the Internet it was really funny and surprisingly has lots of Disney princesses in it too.

Breakfast was a healthy pancake made from 2 eggs and a banana, packet of protein powder is use #isagenix choc flavour and half a can of coconut milk.

High protein breakfast for all of us. After a runaround in the park after the cinema we were ready to chill out and watch some movies.

Tea was something I haven’t had in a while and so easy to make. Chilli 🌶 vegetarian style. Always good to have a few days a week meat free and having been a vegetarian for 20 years I love my veggie meals with no complaints for the kids.

For the sauce just use a tbsp tomato paste half a cup of crushed tomatoes, 1 tsp turmeric and chilli

Instead of mince or if you like mince you could use turkey or chicken mince or quorn mince.

1 cup basmati rice

1 tin kidney beans

1 red pepper

1 red onion


Iceberg lettuce

Top with cheddar cheese, low fat natural

Greek yogurt and avocado with tbsp of lemon juice and a pinch of salt and a sprinkling of tortilla chips.

Beans are a great source of fibre as well as protein.

The best protein actually comes from plant sources rather than meat. You get it from your beans and pulses, grains, nuts and seeds.

Curry in a hurry

I love curry it’s one of my favourite meals. I don’t however buy sauces from a jar anymore as they are full of fat, sugar and salt. So I usually make it fresh with herbs but if you’re in a hurry just buy some #currypowder and some #naturalgreekyogurt low-fat and some #tomatopaste for a healthy, delicious curry in a hurry.

Hidden in the curry is #chicken #cashewnuts #chickpeas #peppers #onions #broccoli #garlic #mushrooms along with #basmati rice 🍚 a better choice that white rice.

The kids even loved it and ate up all their veg in the curry, empty bowls.

So you can see you can make fresh food and it doesn’t take too long. The result is a healthy low fat curry that doesn’t leave you feeling bloated tired and craving more or other bad things like coke, sweet treats and crisps.

It keeps you full right up to bed time. You can serve with some poppedoms or some prawn crackers you can get them from the supermarket a healthier choice than naam bread.

Just watch all of the extras you add, try healthier options and try to cut your portions down and leave out the chips as you already have rice.

Valentines meal ideas to raise your temperature

So valentines is all about the one you love not all of us have that someone to spend time with so if that’s you the. It’s about self love a new concept to me. After years of hating myself and punishing myself I am ready to love every part of my body and mind. So if you’re on your own make your fav meal and fav movie do some home spa treatments read some self help books and make yourself open and ready for that perfect someone. You need to be in the right place in your life to meet the right person for you love yourself first and love will fins you.

For those lucky enough to have found the one to spend valentines with I’ll help you with some delicious meals that will raise your temps at meal time.

So we all have know about chocolate but not the dairy bars real chocolate with high cocoa content so try swapping the fat and sugar choc bars for dark chocolate it’s actually good for you it has antioxidant properties and produces serotonin and raises your libido.

So I have created a few recipes you can try out tomorrow.

Valentines Breakfast

Make sure you book your morning off work for this one.

High protein egg and banana pancakes

2 eggs

1 banana

1 tsp cinnamon

1 tbsp cocoa if you want choc ones

Whisk up

Then add to the pan

Then serve with natural Greek yogurt, blueberries, sprinkle some cinnamon and honey or maple syrup and pumpkin seeds

Serve with grape juice as this will give your partner some energy

Turmeric latte helps with depression

Eggs and cocoa both help produce serotonin the good mood hormone, cocoa for your libido, cinnamon is good for your fertility as are the pumpkin seeds, bananas will give you energy.

Smoked salmon and eggs 🍳

Grill the salmon

Mushrooms fill with pumpkin seeds and Parmesan cheese and pesto and grill

Grill some tomatoes

For the eggs use 4 for 2 people

Whisk add a tbsp milk, pinch of salt and some Parmesan. Stir occasionally and take off heat just before it is completely cooked

Serve on a wholemeal toaster or bagel

Again as above and the salmon is packed with omega 3 and Vit B12 which produces serotonin to help you relax and wholegrains will give you stamina.

Then your romantic 3 course meal could be

To start figs and Camembert cheese or Brie melted in oven and sprinkled with honey, cinnamon and pumpkin seeds

Main course

Choose a meat so if a steak do not chargrill it is actually harmful to eat over cooked beef it actually produces toxins so learn from the French

Chicken, turkey, Tuna or salmon are all good choices

Serve with tomatoes, green peas, avocado, green beans, broccoli, potatoes all great for energy and serotonin production.

Another option would be a curry

Chicken, turkey, soya bean, chickpea or salmon curry.

Turmeric is great for depression, add some

Cayenne for detoxing and add some pumpkin seeds great for your fertility of you need a little help in that direction then add some cinnamon in as well.

Dessert my fav part

So you can have a yummy cake with no processed sugar which at the end of the day makes is fat and tired and you don’t want that on Valentines night.

Avocado choc cake 🍰

250g quinoa soak for 15 mins then drain or overnight

450ml water

175g dates

1tsp vanilla extract

1 tsp baking powder

2 tbsp chai seeds and pumpkin seeds

4 tbsp cocoa powder

Pinch salt

2-4 tbsp maple syrup

2 tbsp Maca powder £4.85 from Amazon

Mix in a bowl then add to 2 cake tins linked with baking paper then cook for 35-40mins 180 degrees


2 avocados 🥑

4-6 tbsps of maple syrup

2 tbsp coconut oil £4.49 from

Then afterwards you could have some little chocs

Love these they are amazing or you can just do some melted dark choc with some peanuts, pumpkin seeds and cinnamon yum and simple to make and lots of good ingredients for

Day 4 sugar free so much energy

Day 4 with no processed sugar and feel so amazing. I feel so much more motivated, stronger and more in control of my health and my future.

I am still eating sugar just natural sugars from dried fruit dates and fresh fruit but nothing processed. Good fats, protein powder, natural yogurt, pumpkin seeds and walnuts, fibre in the cereal bran flakes and chai seeds for energy. This is my dessert every morning guilt free.

I have lost 5lbs already on my Moodfit diet and workout plan, I am getting stronger and more toned and also doing another Isabody challenge to get in the best shape of my life and help others do it too all from the comfort of your own home. I have upped my protein intake after my workouts using #isapro protein powder amazing stuff I use in my breakfast every morning after my workouts, helps build muscle fat, burn fat, faster recovery and your can even take it before bed to burn fat while you sleep.

My workouts are all weights, resistance and a bit of hit for over body weight loss toning and building muscle.

Even the kids get stuck in before school a few exercise to get them set up for the day.

This was tea last night #risotto I use a mix #basmati rice and #barley slow release carbs that are yummy and filling and lower in calls, so easy to make.

Just fry a diced onion and garlic, you can then add what you like I added mushrooms then you add the grains, about a cup full and a tbsp olive oil and 2 tbsp of lemon juice and pinch of salt. You can also add 120ml wine if you want then add a pint of stock.

You then use 2 stock cubes veg or chicken and add a bit gradually at a time until the stock is absorbed then add more. Until it becomes really thick then add Cheese I prefer Parmesan but if you don’t have the. You can just use cheddar, I then added some broccoli as we like it with a crunch and then to serve sprinkle some cheese and crushed pistachio nuts.

Kids loved it well one of them the other is just being fussy at the mo. It’s basically cheesy rice that’s how I sell it to my kids.

Then off to my pole class at #flyawayaerialstudio the girls there are amazing and make you feel so welcome and it’s for everyone for all ages and shapes and sizes.

So you think it’s not for you not only is it a good workout, social interaction, fun help build self confidence and body confidence it also helps with flexibility, arches, strength, cognitive function and anti ageing. It is great to do something that is fun so you get all of these benefits while laughing as well more benefits again.

Love what I can do with my body you just don’t know what your body can do until you push same goes for the mind.
